This is a journal of my vegetable gardens. Skippy was my first dog and he thought the garden was his, even though I did all the work. Now Suzie and Charley follow in his footsteps. We're located near Boston (USDA zone 6A). I have a community plot, a backyard vegetable garden, fruit trees, berry bushes, chickens, and bees. I use sustainable organic methods and do my best to grow all of my family's vegetables myself.

Lower left is baked Butternut squash and sweet potatoes. It was really good. This is what we did:
ReplyDeleteBake 5 sweet potatoes at 400*F til slightly soft (about 15 min).
Peel 2 butternut squashes. Cut into 1 inch cubes. Sprinkle with salt and pepper. Bake in a large casserole dish 30 min at 400*.
Peel sweet potatoes, cube, add to squash and mix. Sprinkle with brown sugar and dot with butter. Bake covered 30-45 min at about 375*.
Thanks. It was the brown sugar that faked me out. I was thinking quinoa or something :-)
ReplyDeleteBeautiful Kathy!
ReplyDeleteKathy, my comment was placed under Cesare's account and I did not realize it. He is The Alaskan Larry Bird! (or so he wishes!)...Johanna
