Thanksgiving plans

Its that time of year again! Time for a feast! I will be serving a crowd. Looks like 10 guests so far.

We have a new smoker this year and will smoke the turkey outside in it. Maybe some fish too.

But the very exciting thing is that I may be able to provide ALL the vegetables from my garden this year! With the mild weather, I have a nice crop of lettuce, spinach, parsnips, Chinese greens and herbs parsley and sage still in the garden. Also lots of already harvested stuff: celeriac, potatoes, squash and pumpkin, onions, garlic, winter radish, cabbage, carrots and beets. And frozen stuff: red sauce and pesto.

I'm starting to work on a menu. (Suggestions welcome!)

The menu so far (still changing):
Pumpkin soup (Jarrahdale, served in the shell, I have a great recipe)
Smoked turkey with celeriac, onion and sage stuffing and classic gravy
Mashed potatoes
Butternut squash (roast pureed or baked/candied?)
Grilled carrots
Grilled bok choy
A big casserole of some type
Fall greens salad (with cranberries, pecans and goat cheese)
Mixed breads (corn bread, black bread etc)

My mom and brother always bring the pies.... I hope they will again this year.

  1. We also smoke our turkey outdoors, but then the skin is really blackened. Do you bring your turkey to the table that way, or do you carve it first? What's your secret?

  3. My husband has grilled the turkey outside for many years and the skin doesn't get blackened. Its crispy and delicious. Very moist meat. I'll get him to write how he does this sometime this week.

  4. Smoked turkey...OMG. I need to go swimming for the next ten days to get lean enough for the feast. The celeriac, onion, and sage stuffing sounds amazing! If you ever want to share, please post the recipe. As for the casserole, some sort of rice casserole would probably be good. Have it feature some of your backyard veggies. Call it Backyard Rice Casserole. lol

  7. I tried a great recipe from The Food Network website. Sweet and Sour Butternut Squash from Mario Batali. My husband tried it and immediately demanded that I make it for Thanksgiving. That really is a compliment because he has never demanded I make anything! I did not make it in the ring shapes I just diced it up in half inch wide strips so I would have room to put it all on one pan. It did turn out great!
